I feel an important part of beauty is not only what you do on the outside but also what you put into the inside. Good fresh food with many vegetables along with love and caring for others. I spend way more time, serving others than I do on my beauty routine daily. Kim Alexis

Today, I took a walk to the Farmer’s Market in town, and brought home some delicious heirloom tomatoes, corn, and a few other items. It occurred to me to make a salad and so, I went out again to another Market and picked up some Avocados. I created the recipe below with other ingredients in my kitchen and it was delicious. I hope you give it a try too. If you love Avocados, you’d know that they are rich in vitamins and nutrients. They have about 20 nutrients that make it a super food. Add to that mix, a serving of the most exquisite and delicious Heirloom Tomatoes, and you have the perfect little dish for a relaxing, weekend afternoon at home. My recipe below is quick and easy and you can always vary it.

Food Files: Avocado & Heirloom Tomato Salad w/ Argan Oil & Basil Infused Olive Oil
INGREDIENTS:
1-2 Ibs of diced Assorted heirloom Tomatoes
1-2 Large Avocados cored and diced (Any of the many types would do)
1/4 Teaspoon coarse Kosher Salt or Le Saunier De Camargue fleur de sel Sea Salt (or sprinkle to your taste)
1-2 limes or 1 Large lemon – Juice squeezed into a cup
1/4 Teaspoon of Basil Infused Olive Oil (Oliviers & Co)
1/4 Teaspoon of Argan Oil – Dip & Scoop Culinary Argan Oil
Serves 4
PREPARATION:
Prep Time: 10-15 minutes
Ready to Eat: In 15 minutes
On a clean chopping board, dice all your tomatoes into any shape you prefer. I halved some of mine, and cut some lengthwise. Cut the ends off the Avocado and cut it in half and remove the stone/seed. Peel the outer skin and slice the halves into i/2 inch pieces. You may choose to dice them or leave them as is. Add the contents to a mixing bowl and pour the reserved lemon juice over the fruit. Add your salt, the Basil infused olive oil and Argan oil. Toss and enjoy. It is a quick and easy delicious summer time salad that can be enjoyed alone or as a side dish to a main dish. Enjoy it with a protein of your choosing or as side dish with Pasta, Quinoa or any grain you love. Enjoy! My Avocado & Heirloom Tomato Salad w/ Argan Oil & Basil Infused Olive Oil was paired with grilled Teriyaki Salmon. Bon Appétit!

As the summer wraps up, I am trying to make sure to enjoy all the fresh summer fruits and vegetables at my local markets. What I love about fresh food items is that they are healthy and full of flavor. You make them and eat them right away and they satisfy every part of your palate. Plus, they are often low on the calories count. Do you prepare dishes with fresh seasonal food? Which foods do you like? Do share.

This time of the year is best for avocados and I eat as much as my stomach will allow! This salad looks very tasty.
It sure is. <3
That salad looks awesome. Love the pics.
Thank you! I made it quickly and didn’t have time to do a better plating. 🙂
So colorful and delicious
Thank you Ruth! It was easy and tasty! 🙂
This recipe looks simply amazing! I am definitely having it for lunch tomorrow. Love the inspirational quotes throughout.
Thank you Lauren! I enjoyed it. 🙂
I love avocade and I also love Argan oil. I’ve never tried adding the oil to my food and I never thought it’s even possible. I’ve got to try this!
This salad sounds tasty! Avocado is one of my favorite foods :).
Awesome salad. I truly love this. I will try this recipe soon!
It is nice to see other ways to serve avocados. In the Philippines, avocados are prepared as a dessert. We scoop and dice the avocados, put it in a deep dish, pour milk over it and sweeten with sugar. You can try that too!
It sounds good to me. 🙂
I’m used to having avocado with guacamole and as a shake – haven’t really tried it with salads. I guess I should try this one of these days. It’s healthy and it would be nice to have avocado in its solid form. Lol.
Give it a try. You’d be nicely surprised. I’m not a fan of Guacamole but I love Avocado in almost everything else.
This looks and sounds delicious. I love all the flavors and foods in the recipe. Thank you!
Your salad looks delicious! I have only ever tried avocados once in my lifetime. Lately I have been hearing so much great news on how they are so healthy. I will have to give them another try.
Your Avocado & Heirloom Tomato Salad w/ Argan Oil & Basil Infused Olive Oil looks and sounds amazing. I love growing tomatoes but they did not turn out this year so I’ve been buying them.
This salad sounds amazing. I am in the midst of an avocado obsession right now. Plus, my garden is overgrown with tomatoes. I think this dish is going to happen soon at my house!
I could eat every mouthful, but I’m more used to putting argan on my hair!
It is delicious with a nutty flavor. The one they make for food is processed a bit differently from the one for hair. Just like coconut oil and others.
This looks like the perfect recipe for me! I haven’t tasted heirloom tomatoes but I love avocados! I guess I’ll have to try this one of these days. Thanks for the recipe! 🙂
Fresh summer veggies are coming to an end This is a great way to use ’em up!s
That is true… eat em!
Omg my mouth is watering looking at this salad. Definitely pinning for later!
One of the best things about growing up in California was easy access year round to avocados. The town I graduated high school from is actually like the avocado capital (or something like that). Anyway, I love avocados so much and this salad looks so fresh and delicious it’s making my mouth water. Definitely pinning for later.
Thank you Debbie! What a thrill to live where it is abundant. It is pricey in this/my part of the world. 🙂
This looks super delicious! I’m kind of bummed because I grew heirloom tomatoes in the garden this year and have gotten zero so far. It was too rainy and cold I think. Now that it’s hot I fear it’s too late in the year. Sigh.
I planted some too and they have not produced any fruit… Oh well!
Sounds really good. I make some delish guacamole and I put tomatoes in to sweeten it up.
Always one of my go to food combos! The tomatoes and avocados are so good right now!
I have never heard of Argan oil… but I do love avocado and tomatoes!
Those pictures give that food life for sure. I love a good salad especially with delicious tomatoes and avocado.
very pretty looking salad! I hate that I am allergic to avocados 🙁
fresh tomatoes and avocados are one of my favorite combos!
Likewise. 🙂
Avo and tomato are 2 of my all time favorite foods!
Love them too! 🙂
This looks tasty and looks so pretty to serve at a party. Thanks for sharing and I love that Kafka quote at the beginning.
Those tomatoes look gorgeous and I didn’t know you could eat Argan oil. What does it taste like? Anything like truffle oil? 🙂
It has a slight hint of a nutty flavor and quite lovely too. Not like truffle oil.
Avocados here are very expensive, so whenever it’s the season i took advantage of it.
Same here and so I’m careful to go to a market where the price is fair.
That first quote totally fits me sometimes. I tend to let food occupy my time.
You are not alone.
I love Avocados so I can’t wait to give this delicious dish a try! Thanks a bunch for sharing!
This salad is perfection. I am pinning it for sure. Love the addition of the basil infused olive oil.
Thanks! It gave the dish something extra. <3
Tomatoes are MY FAVORITE! I need to remake this ASAP. Looks really great.
Let me know if you liked it. Plus, you are an inventive cook and you can add stuff to it. I wanted to add slivers of hard cheese but decided to keep the calorie count down… Might still do it .;-)
I never would have thought of a salad like that, it looks delicious though! Thank you for sharing this great recipe with us! 🙂
I have never eaten avocado, but your salad looks awesome.
This looks delicious! I love avocado and tomatoes. I actually havent gotten avocados recently so thanks for the reminder 🙂
That salad looks great. .We can try this out this weekend since Avocado is in season in coutry right now.
These are two of my favorite things! I am going to make this very soon!
Theres nothing like summer harvest time and those warm tomatoes right off the vine!
That sounds phenomenal! I love things like this for lunch in the summer time.
My husband loves avocados while I love tomatoes. Your salad has two of our favorite ingredients.
Salad is bright and colorful green, orange and red all cheery colors. Love avocado on my toast in the morning or and avocado smoothie. Great blog post.
Hi Elizabeth! Revisiting your site again for the recipe. I just got home and I bought some avocados. This will be a great side dish for dinner tonight.
Eileen, enjoy it… It is simple and delicious. Feel free to doctor it to suit your palate and you’d love it. Let me know. 🙂 TY!
i love AVOCADO. I love it with milk and ice! Love this recipe of yours too!
This looks delicious! Thanks so much for sharing 🙂
I don’t really care for avocados but I would replace them with cucumbers! That salad looks delicious!
Avocado is one of those healthiest fruit that I love so much. I just love how delicious & healthy this could be when combined with Heirloom to make such an yummy salad. Would love to try it sometime over the weekend.
Looks delicious , Avocado is my favorite i love it with ice and milk, or i gonna shake this and froze to my freezer and eat like an ice cream
I convinced myself for years that I didn’t like avocados. I tried them again last year as an adult and now I can’t get enough!
What a riot. I was that way once too.
Love Avacados
My daughter and I love avocados. They are yummy enough to eat alone, but we’ll be trying this for a change up.
This sounds so tasty. The tomatoes look delicious!
I’ve been hearing so much about argan oil for the hair and skin…I had no idea that you could cook with it. I’d like to try this salad.
I am one of the few people who hate avocados but looks like such a healthy salad
Avocado is the most healthy thing in the world! and its flavor is excellent in every single way!
