Last month, I shared my Apple Salad w/ Chili Lime Sauce recipe with you. If you recall, I promised to bring you another dish I prepared with one of the delectable gourmet sauces from Robert Rothschild Farm. I’m keeping my promise and I bet you’d love the sweet and spicy flavor of their Pineapple Coconut Mango Tequila Sauce. This is a quick and easy recipe to follow and the finished dish would be fit for a King and Queen. I have two recipes to share today, and I will divulge one first, and the other, beneath it. Enjoy!

INGREDIENTS:
4-6 Salmon Steaks
1/4 Teaspoon coarse Kosher Salt or Sea Salt (or pinch/sprinkle to your taste)
1/4 cup of Pineapple Coconut Mango Tequila Sauce.
1 Tablespoon full of rosemary & garlic seasoning or any of your choice
Robert Rothschild Pineapple Coconut Mango Tequila Sauce.
Serves 4-6
PREPARATION:
Prep Time: 5-10 minutes
Ready to Eat: In 30-45 minutes
Wash the Salmon Steaks and place them in a metal or ceramic bowl. Add your Kosher salt and 1 TB of seasoning to the bowl and rub in the mixes on both sides of the fish. Let sit for 2-3 minutes Then add 1/4 cup of Pineapple Coconut Mango Tequila Sauce to the mix and again baste the fish steaks evenly and let sit for 2-3 minutes. Place in a preheated oven at 375 degrees. Periodically check the Salmon and baste with extra sauce if needed. Remove the fish when the top is golden brown and fish flakes with a slight prod of a fork. Serve with roasted vegetables while hot.

1-2 Ibs of Butternut Squash
1 1/2 Ibs of Brussels Sprouts
1 head of Cauliflower
1/4 Teaspoon coarse Kosher Salt or Sea Salt (or pinch/sprinkle to your taste)
1-2 Tablespoons of Olive Oil,
1 Tablespoon of garlic, thyme, and rosemary seasoning
Serves 4-6
PREPARATION:
Prep Time: About 15 minutes
Ready to Eat: In 10-15 minutes
The roasted veggies you see were very easy to make. I used butternut squash, Brussels sprouts, and Cauliflower. Wash and pat dry your veggies. Cut/cub and cut off any dry roots. Add to a large metal bowl and add 1-2 tablespoons of Olive Oil, a pinch of salt and garlic, thyme, and rosemary seasoning. Mix well. Place on a large baking sheet and spread the veggies out. Roast at the same temperature as fish but for 10-15 minutes max. Enjoy! Bon Appétit!

This sounds amazing! I love Salmon with fruity sauces or chutneys. We’ve bought Robert Rothschild Farm products before and mostly ate them with cream cheese and crackers. Now, I’ll try the sauce with my fish dishes. I’ll have to look for this Tequila sauce. It sounds delicious!

I would love to try this recipe out, especially that the sauce is so unique. I am not really a fan of salmon, I find it to heavy, but with this sauce I bet the entire taste changes.
