Would You Like A Delicious Low Calorie Summer Treat? Now that we are in the full throes of summer, it’s time to kick back and enjoy all the delicious, body cooling treats that are popular at this time of the year. I love ice cream, frozen yogurt, flan and all the delicious treats that find their way to our tables and hearts during this season but, I could do without the heavy calories and sugar that comes  with them. When I saw the photo challenge for this week and Michelle’s delectable photo of a treat with a cherry on top, I wanted one too.  I thought about it and figured it would be a good idea to come up with equally tasty summer treats with a tad less girth expanding calories …  say what!?  Trust me, I have a sweet tooth and need to put the brakes on. What I love about the cherry on top analogy is that I decided to make my pièce de résistance a healthy treat… So, for my cherry on top choice, I created a muy delicioso treat with fewer calories.  I think you would love this healthy, delicious dessert. You can always go for the decadent by adding more chocolate syrup or chocolate chunks. Yum!

INGREDIENTS:
1 Ripe, diced Peach
1 cup Blueberries
1 cup Raspberries
1 cup Blackberries
1/4 cup Strawberries
1/4 cup unsweetened shredded Coconut
1/2 cup chopped Dried Mango slices (soften)
1 Kiwi fruit (diced)
Red and White Cherries for topping. (serve whole or diced)
1/2 cup Organic Plain Yogurt
1/4 cup Organic Orange Juice
Midnight Moo Organic Chocolate Syrup
Light Whipped Cream
3 different sized glasses or bowls of your choice

PREPARATION:
How did I Create this Treat?  Easy Peasy! I went shopping at my local favorite stores and markets and gathered a delicious selection of organic fruits and complements. Above is the recipe for the delicious trio fruit delights I created. I used three glass sizes so you can imagine making a small, medium, and large portion using the same ingredients.  Simply gather your fruit, wash and prep them by keeping them whole or by dicing, chopping or slicing them. Line the glasses with different colored fruit and then sprinkle the top with a teaspoon of unsweetened coconut.
Once you’ve filled you glasses with the main ingredients, decide what else you would like to add as an extra treat. I added yogurt to one glass, chocolate syrup to another, and fresh orange juice to the third. It’s up to you. I topped them with light whipped cream and added red and white cherries on top. Viola! Enjoy! All of my treats were made with fresh, organic ingredients and I enjoyed every bite with my family. You can use a wide range of fruits and any other ingredients you wish to add; all will taste divine. Go ahead and make yours and let me know what you think.

Some Food For Thought: One of the main pleasures of this treat is the complexity of textures and tastes. Did I tell you the mango slices are slightly dry and chewy? That the shredded coconut is crunchy and the kiwi and cherries are a bit tart. Add those flavors and textures to the other fruits and you’ll come to appreciate the sensory pleasure of this aphrodisiac dessert. Plus, I drizzled one of my favorite Trader Joe’s yogurts on top: The Organic European Style Plain yogurt. It has a unique, tart bite and creaminess that makes you want to go back for more. Yum! As the summer days grow and we are tempted to indulge, pick a few healthy, low calorie treats to balance out the extra sinful indulgences. We all need them. Enjoy your summer and stay active too. Oh yeah, don’t forget to enjoy those cherries on top!
