Try The World: A Taste Of Portugal

09/03/2016

“The flavors are familiar to any American who’s had Italian, Spanish, or Mediterranean food, with their abundant use of olive oil, onions, garlic, and herbs, but there’s a distinct soulfulness to Portuguese cooking.” Chef George Mendes, Chef-Owner Aldea/Co-Author My Portugal: Recipes and Stories

Portugal is famous for its simple, rustic dishes made with fresh vegetables and seafood. Just in time for spring, we bring you the best of Portuguese cuisine so you can experience this country’s incredible culinary specialties from the comfort of your home. Try The World

Try The World: A Taste Of Portugal Welcome to another month of exquisite, delectable cuisine curated for Try The World – Portugal Box. This month’s best of Portugal is brought to us through the keen eyes and palate of Chef George Mendes who is chef-owner of Aldea and Lupolo in NYC, co-author with Genevieve Ko, of the cookbook My Portugal: Recipes and Stories, and winner of a 2012 Michelin star. If you’ve ever been to Portugal which is on the Iberian Peninsula, in Southwestern Europe and is the westernmost country of mainland Europe with borders by the Atlantic Ocean to the west and south and by Spain to the north and east, you’d know that bacalhau/salted codfish is the most popular ingredient in Portuguese cuisine. Portuguese food has a lot of Mediterranean influences and is known for its use of a wide range of fresh seafood, herbs, and spices, a fiery pepper called piri piri, olive oil, garlic, meat/poultry, and grains; all that hearty cooking is washed down with the ever popular Port and Madeira wines.

The global influences of Portuguese food range from Portuguese bread rolls, Piri-Piri sauce, to”Portuguese-style” chicken and even to the introduction of refined sugar to Japan and corn to the African continent. So a trip to Lisboa, Porto, Braga, or any big city or small town in that beautiful country will expose you to many of the simple, rustic dishes made with fresh produce and local seafood. In addition to the many influences it has had on global cuisine, Portugal has also given us its share of famous chefs and top-rated restaurants; you may know some of the chefs: Emeril Lagasse, Chef José Avillez, Chef Luisa Fernandes, Henrique Sá Pessoa, Chef Rui Correia, George Mendes and many others who share their skills and passion for Portuguese cuisine.  So, join me as we explore the selections from this month’s box.

“Cooking is at once one of the simplest and most gratifying of the arts, but to cook well one must love and respect food.” Craig Claiborne

Try The World: A Taste Of Portugal: What is in the Portugal Box My box arrived packed, choc-a-bloc with eight (8) carefully curated specialties that are must-have items in any Portuguese kitchen. It contained 1. Caramelized Onions with Port wine from Casa da Prisca; This culinary spread is made with, onions, Portugal’s iconic port wine, and a balsamic reduction that enhances the flavor.  2. Sea Salt and Lemon from Hands on Earth; This finishing salt adds a dash of lemon zest to any dish and is from a company that specializes in producing organic herbs and seasonings and products made free of pesticides and chemicals.    3.  Lemon Cookies by Casa Lucena; These popular crisp and buttery traditional treats are made from an old Portuguese recipe.  4. Codfish in Olive oil by Briosa Gourmet; Bacalhau or, in this case,  canned codfish by Briosa Gourmet gives us a taste of a national favorite. The can is wrapped in beautiful, bright yellow packaging reminiscent of old hydraulic tiles.

5. Crunchy Apple rings by Frutaformas; Carefully selected sweet apples are cut and dehydrated using an ancient technique that preserves their vitamin-rich nutrients.  6. RARE Pumpkin and Hazelnut jam by Quinta de Jugais; This is a very popular premium spread crafted by artisans in Serra da Estrela using traditional Portuguese recipes. The Pumpkin jam is one of the most popular fruit preserves in Portugal  7. Piri Piri Hot Sauce by Paladin; This spicy kicker of a hot sauce comes in several flavors and is described on the website as “a quintessentially Portuguese condiment.” Piri piri hot sauce arrived in Europe in the 15th century when Christopher Columbus brought back some piri piri peppers from some far-off land. To this day, the sauce can be found in almost every kitchen in the country.  And last but not least, 8. Extra Virgin Olive oil by Olivais do Sul; This bitter, slightly spicy, and versatile olive oil is perfect for a variety of dishes. The olives are grown in central Portugal and cold-pressed to preserve their complex aroma and distinct flavor. I must say that the taste is heavenly.
