Merry Christmas! Happy Holidays! I spent a good portion of my day in the kitchen preparing a Christmas meal for my family. When I saw the theme for the Photo Challenge – NOW – I couldn’t help but share what I was doing in the kitchen. In the second collage above, I have included shots of the foods I prepared in my kitchen. We love squash and, since it is in season, we included two types for my roasted root vegetable platter; Kabocha and Butternut Squash. We also added some cauliflower florets and some Brussels sprouts. The top middle shot is of the marinated trout baked/grilled to a delicious deep earth/gold shade. I love Salmon and Trout and eat them a few times a week. The middle section of the collage showcases my favorite mixed vegetables with cottage cheese tart and my first shot at baking a scrumptious home made Pecan Pie.

I must confess that this is my very first home baked Pecan Pie and I am proud to announce that it got a thumbs up from everyone present at our Christmas table. The tart is a sweet and savory treat that my kids love and the Pecan Pie turned out better than I expected. The last section of the collage just shows shots of the medley of vegetables, cauliflower, Brussels sprouts and the squash ready to be roasted, and the dining table with wrapping paper on it … last minute gift wrapping is exciting. Stay tuned for future posts with my recipe for each dish. Yes, I do love to cook. In case you are wondering why I included shots of the holidays in my first collage, well, it is Christmas Day and I couldn’t resist adding a few reminders. Merry Christmas and a very Happy New Year to all!

    never had a pecan pie in my life. they sure look yummy though. is it a common Xmas food? it’s mostly just turkey and ham here in Singapore.

    Hi Elizabeth, Merry Christmas & Happy New Year. Although know through blog and social media but after a while I began to inspired by the efforts you poured in every of your blog post. I like the photos, detail description, thoughts and sharing. However the haiku i need to read twice to understand it because I come from Malay school therefore my english is not that good yet. I will continue to learn and improve. All the best for 2016.

    Your pecan pie is beckoning me! It’s the one pie I did not indulge in this holiday, and I have sorely missed it! I think I might have to throw one together this week (after viewing your gorgeous version)!
