Food Files: Quiche With Mixed Vegetables

This is a new addition to my Food Files segment. Quiche is such an easy pie to make and I think it has suffered from years of people making jokes about it by saying certain people (men, programmers, hot guys, smart gals, etc) don’t eat Quiche. We can all enjoy a slice of this delectable pie because we can add any combination of ingredients to our mix and make it to our own tastes. Get as creative as you wish and enjoy it in 45 minutes flat. I love to experiment with mine and have made all sorts of Quiche dishes with a wide range of ingredients. This veggie rich, seasoned and heart healthy version should be light and tasty too. Enjoy!

“I don’t always prepare such rich meals. Sometimes I’ll just serve a simple Quiche, salad and dessert for dinner. During the week I try to eat lightly.” Paul Lynde

Preparation:

If using a pre-made crust, bake it for 10 minutes at 400° to dry and give it a crusty texture.
In a frying pan add 1-2 tbsp of olive or sesame oil and warm slightly over medium heat then add your chopped veggies and seasonings and saute them for about 2-3 minutes. Set aside to cool down.
Once the veggies have cooled get ready for the next step.
In a mixing bowl, add your eggs, cheeses, and milk mixing them in until you have an even texture.
Add the sautéed veggies to mix and fold them into the creamy mix.
Pour contents into your crust and place in the oven.
Bake in the center of your oven at 350° for 45-55 minutes or until a fork inserted in the pie comes out clean.
When ready, place it on a cooling rack until you are ready to serve it. Enjoy with a salad or your favorite side dish.

Food is key to our sustenance and is often viewed as a way of sharing love and affection. I grew up hearing that the way to a man’s heart is through his stomach and I can understand why. We gather to enjoy it with friends and family, and on special occasions. I’ve written a number of posts on food but, recently, my kids encouraged me to create a dedicated page to feature our recipes, our love for fresh ingredients, and the joy of good food. This segment will be a repository for all things food; recipes, stories, reviews, special offers, and more. If you’d like to share a good recipe with me please do in the comments. Enjoy!

This week’s Recipe Is Quiche With Mixed Vegetables. Hope you enjoy it!

Positive Motivation Tip: Enjoy your favorite foods with friends and family this holiday season, and remember to share your gratitude for the abundance.

That quiche sounds really great but unfortunately for me, my kids are picky eaters. The only vegetable they eat is corn. So I am limited on what I can make for dinners.

I have had quiche before and i hated it but so did everything else I ate by that person, so i’m starting to think my issue was the cook and not the food. So I will give it a try again.

This looks delicious – I’ve never had a quiche before but it isn’t uncommon for me to make frittatas for brunch sometimes. I always heard that quiches are easy to mess up so I’ve never tried making one, but I guess since it’s really just a frittata with crust, maybe I can pull it off. Plus, this one looks yummy enough to risk, so there’s that.

I love making quiche, and it is nice that it is such a versatile dish where you can switch up the veggies. I’ll have to give mixed veggies a try as we usually do just spinach.
