Today, I took a walk to the Farmer’s Market in town, and brought home some delicious heirloom tomatoes, corn, and a few other items. It occurred to me to make a salad and so, I went out again to another Market and picked up some Avocados. I created the recipe below with other ingredients in my kitchen and it was delicious. I hope you give it a try too. If you love Avocados, you’d know that they are rich in vitamins and nutrients. They have about 20 nutrients that make it a super food. Add to that mix, a serving of the most exquisite and delicious Heirloom Tomatoes, and you have the perfect little dish for a relaxing, weekend afternoon at home. My recipe below is quick and easy and you can always vary it.

Food Files: Avocado & Heirloom Tomato Salad w/ Argan Oil & Basil Infused Olive Oil

INGREDIENTS:
1-2 Ibs of diced Assorted heirloom Tomatoes
1-2 Large Avocados cored and diced (Any of the many types would do)
1/4 Teaspoon coarse Kosher Salt or Le Saunier De Camargue fleur de sel Sea Salt (or sprinkle to your taste)
1-2 limes or 1 Large lemon – Juice squeezed into a cup
1/4 Teaspoon of Basil Infused Olive Oil (Oliviers & Co)
1/4 Teaspoon of Argan Oil – Dip & Scoop Culinary Argan Oil
Serves 4
PREPARATION:
Prep Time: 10-15 minutes
Ready to Eat: In 15 minutes
On a clean chopping board, dice all your tomatoes into any shape you prefer. I halved some of mine, and cut some lengthwise. Cut the ends off the Avocado and cut it in half and remove the stone/seed. Peel the outer skin and slice the halves into i/2 inch pieces. You may choose to dice them or leave them as is. Add the contents to a mixing bowl and pour the reserved lemon juice over the fruit. Add your salt, the Basil infused olive oil and Argan oil. Toss and enjoy. It is a quick and easy delicious summer time salad that can be enjoyed alone or as a side dish to a main dish. Enjoy it with a protein of your choosing or as side dish with Pasta, Quinoa or any grain you love. What I love about fresh food items is that they are healthy and full of flavor. You make them and eat them right away and they satisfy every part of your palate.     I love avocade and I also love Argan oil. I’ve never tried adding the oil to my food and I never thought it’s even possible. I’ve got to try this!

    It is nice to see other ways to serve avocados. In the Philippines, avocados are prepared as a dessert. We scoop and dice the avocados, put it in a deep dish, pour milk over it and sweeten with sugar. You can try that too!

    I’m used to having avocado with guacamole and as a shake – haven’t really tried it with salads. I guess I should try this one of these days. It’s healthy and it would be nice to have avocado in its solid form. Lol.

      Give it a try. You’d be nicely surprised. I’m not a fan of Guacamole but I love Avocado in almost everything else.

      It is delicious with a nutty flavor. The one they make for food is processed a bit differently from the one for hair. Just like coconut oil and others.

    One of the best things about growing up in California was easy access year round to avocados. The town I graduated high school from is actually like the avocado capital (or something like that). Anyway, I love avocados so much and this salad looks so fresh and delicious it’s making my mouth water. Definitely pinning for later.

    This looks super delicious! I’m kind of bummed because I grew heirloom tomatoes in the garden this year and have gotten zero so far. It was too rainy and cold I think. Now that it’s hot I fear it’s too late in the year. Sigh.
