Green beans, also known as string bean, snap bean in the northeastern and western United States, or ejotes in Mexico, are the unripe fruit of various cultivars of the common bean. Wikipedia

My new weekly segment on food; Food Files is the brainchild and brilliant idea of my kids. I’ve always been a foodie and love experimenting with different ingredients and spices, but I’ve never considered creating a segment on Food. I don’t claim to be a Julia Child, I’ll leave that professional-level skill to my Mom and other experts. The dish I’m sharing today, Green Beans Medley, is an easy dish to make. A good friend from my college days shared the dish with me and she assured me it was a favorite of her family in Beirut. It can be eaten as a side to a full meal or as a complement to a rice, couscous, or pasta dish. Food plays an important role in all of our lives because we need it for nourishment and to keep our bodies fueled and healthy. Many of us have good memories of meals shared, and food remains a great way to bring family and friends together.

Ingredients:
3 Ibs of Green Beans
8-10 fresh, Ripe Tomatoes (diced)
1/4 cup of Olive Oil (cold pressed)
1/4 cup of chopped Ginger
1 whole clove of Garlic (diced)
1/2 of a fresh, chopped hot pepper

Seasonings:
1 tsp Tumeric
1 Tbsp Herbes de Provence
1/2 tsp sea salt
1 tsp Rosemary

I’m very inspired by nature – you could say Mother Nature. I look at things around me and get all kinds of inspiration daily. Martha Stewart

Preparation:
In a medium size pot, add the olive oil and let it warm up for a few minutes. Add the fresh tomatoes, but not the green beans to the pot. Add all the other fresh ingredients and spices to the pot. Set the stove on medium heat and let the ingredients simmer for 20-25 minutes. Stir occasionally and reduce heat if it’s bubbling or burning. Taste the stew to make sure the tomatoes’ acidity is reduced. After 20-25 minutes, add the green beans and mix in well. Cover the pot and simmer for 10- 15 minutes or to your taste. I like my greens crunchy so I cook them just long enough to maintain a crunch. Remove the pot from the heat and serve with couscous, rice, or as a side to a protein of your choice.

Food is key to our sustenance and is often viewed as a way of sharing love and affection. I grew up hearing that the way to a man’s heart is through his stomach and I can understand why. We gather to enjoy it with friends and family, and on special occasions. I’ve written a number of posts on food but, recently, my kids encouraged me to create a dedicated page to feature our recipes, our love for fresh ingredients, and the joy of good food. This segment will be a repository for all things food; recipes, stories, reviews, special offers, and more. If you’d like to share a good recipe with me please do in the comments.

    Yours are the kind of yummies I should be looking at Elizabeth. I find myself making a Gingerbread House-Christmas Tree I saw on Pinterest: I can’t stand the challenge. LOL. I hope the family likes it, meaning, I hope I don’t botch it.

    In the meantime, your selection looks so, so yummy. I might have to go back to the grocery store. 🙂 Yum!

        Greetings,Elizabeth … I ended up using three-boxes of mix to make the gingerbread panels with. Canned icing served as the glue and various candies as the ornaments. I also used a three-tower octagonal (on all 3 layers) design, and changed the roof on my version of my Pinterest inspiration, shown as well. … I love a good challenge. 🙂

    I love green beans -raw, cooked, from a can, frozen. I do not like cooked tomatoes–raw-no problem but not cooked! I do think this is a recipe one of my friends would love and I will forward it on to her.

    As a vegetarian I am always looking for new ideas and this looks delicious! It seems so simple to make and healthy too! I think we will definitely be trying this, maybe with some pasta or rice as you suggested!

    I enjoy cooking but I don’t always know how to use spices, but either way i have fun with it.. I do like that you are using Turmeric. I hear this spice helps with the liver. I have to read more, anyway thanks for sharing this with us.

    These sound amazing! In Alabama we put bacon or ham and potatoes in our green beans and cook them all day. I’ll have to try this recipe. I LOVE turmeric! That has to be a delicious combination!
